Um.....wow. Having to choose a specific sequence in one of the three movies? Killer.

I'd say do something involving the Elves--like Rivendell or Lórien or even at Helm's Deep or something--to my amateur's eye, it seems as though they definitely change the lighting for all things pertaining to elves, to add a glow to it all, etc. Or you could go in the opposite direction and pick something to do with the evil side (actually, I'm thinking of Isengard) and the way everything is portrayed in such a way that it never looks hospitable, etc.

5-12 minutes? Out of the entire trilogy??

It really depends on what you're comfortable with. :) Focusing in on one location would probably be good: centering on a scene that embodies either Mordor, Rohan, the Shire, Gondor, or Rivendell/Lothlorien. The Siege on Minas Tirith from RotK would be a very interesting one, in my opinion, or The Sacrifice of Faramir, or perhaps something from the Shire.

But I'm going to stop giving examples now lest I go through the entire movie. :P

I dunno if I would do a battle scene as that is usually some of the most confusing parts of the movie and they don't always show the elements you are looking for.

Here's a few suggestions from the 3 movies [broken up into chapters from the DVD]:

FotR--
Concerning Hobbits [lights, colour, setting, costume, etc. especially]
Rivendell [lights, colour, setting, costume, ((differences in)) body language, etc.]
Caras Galadhon [lights, colour, setting especially]

TTT--
The Banishment of Eomer [body language, setting, lights especially]
Arwen's Fate [colour, costume, editting]
Where is the Horse and the Rider [body language, lights, costume, camera angles, editting, sound]
The Tales That Really Mattered [costume, camera angles, editting, setting, sound]

RotK--
Arwen's Vision [lights, costume, editting, camera angles, sound, colour]
The Lighting of the Beacon's [editting, camera angles, sound, colour]
The Sacrifice of Faramir [camera angles, editting, sound]
The Ride of the Rohirrim [camera angles, editting, sound, light, props, setting]
The Return of the King [camera angles, sound, light, props, setting, costume, body language]

The Ride of the Rohirrim sounds like it would be good! (And its one of my favorite scenes!) To throw another idea into the mix, it could be interesting to look at a scene from Moria.

Hmm.. that's really difficult. I'd suggest you not to do a battle scene, but rather a scene where the characters speak some of the "words of wisdom" like e.g. the scene where Sam talks about the stories that really mattered in TTT or a scene in Rivendell or Lórien.

I think the scenes that take place in Lothlorien certainley would give you a lot to discuss about lighting, camera angles, costumes. Remember the way the camera follows the circular stairs surrounding the tree as it zooms in?

Just my suggestion. :]
