Well, I'm back!! Hobbit! It's been a while, hasn't it? Not that anyone missed me or anything! LOL
Anyway, I just wanted to share this Lembas Bread recipe with al you Hobbits, Istari, Elves, Dwarves, Men and many other Races of MiddlEarth...
Ingredients:
2 1/2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons cold butter (1 stick)
1/3 cup sugarIngredients:

1/3 cup sugar
1/2 teaspoon cinnamon
2/3 cup milk (I found that using using 2/3 cup of heavy cream is better)
1/2 teaspoon vanilla
honey or maple syrup for dipping
Preheat over to 425 degrees.
Mix flour, baking powder, and salt in a large bowl. Add butter and mix with a fork or pastry cutter until mixture looks like fine granules. Add sugar and cinnamon and mix. Add milk and vanilla and stir with a fork until dough forms. (you can add a little bit more milk than the recipe calls forif it gets too hard to stir.)
Roll into balls and place on cookie sheet, mashing them out until they are about 1/2 inch thick and 3 inches across. Makes about 12 - 14. Bake for about 12 minutes or until insides aren't gooey. (I would suggest making them small, for if they are too big, they will fall apart very easily.)
This is a great recipe if you do everything right, and it really does fill you up fast.

DIRECTIONS: Preheat over to 425 degrees. Mix flour, baking powder, and salt in a large bowl. Chop butter into mixture with a pastry cutter or knead in with your fingers until you get a crumbly mixture. Add sugar and mix. Add milk and lemon extract and stir with a fork until dough forms.
Roll the dough out about 1/2 inch thick. Cut out 3 inch squares and transfer to a cookie sheet. Criss-cross each square from corner to corner with a knife. Bake for about 12 minutes or until set and lightly golden. Makes 10 to 12.
Now, to make this recipe taste really good... you would have to travel to MiddleEarth to get the best ingredients from the Elves.
