When I see that a company is successfully combining innovation with quality control, how do I choose a platform that will allow me to test new features without disrupting the stability of the entire system?

I imagine the process of testing features, but everything seems too abstract and undefined. I mentally run through scenarios, but none gives a clear sense of how it should actually work.
