Chris Thile! He's had several LotR references in his music throughout the years! He doesn't have his own website, but his band's is www.nickelcreek.com and he's on Amazon as well.
Also, Bethany Dillon's song "A Voice Calling Out" has always made me think of a huge Middle Earth battle, but I don't know if it was actually inspired by LotR. She is a LotR fan though, so who knows.

I don't know if this counts but.....
http://www.billbrownmusic.com/musicG5.htm
The music to Lineage II, a bit lower on the page. It's quite similar to LotR in many of the excerpts, and 'Hall of Mists' has the rivendell theme... followed by PotC-ness.
Beautiful music, I think, all of them.

I can't believe I forgot to add this. For shame.
The band is Battlelore.

Heavily inspired by the works of Tolkien.

I knew you'd like them Vivi. I've gotten quite obsessed with them lately.
I've still to check out Galadriel. *makes mental note*

No one's mentioned Tolkien Ensemble, Casper Reif and all? And Christopher Lee is even featured on one of their 3 LotR-based CDs! He says the One Ring poem in a really creepy voice.
Interesting bands; I may have to check them out too!

Anyone heard of the Brobdingnagian Bards? They're a good band, and a lot of their songs are really amusing...They've got an album called 'Memories of Middle-earth' They play folky/celtic music. I'll post a website later...
