My friend and I are having a LotR party (Middle Earth New year is March 25!) and I was wondering if any of you had a good recipe that tasted halvway decent and looked like lembas.

Yes! I got it off Council of Elrond, this recipie is good. though the dough is EXTREMELY sticky (it even sticks to my non-stick rolling pin!) so you'll need quite a lot of flour for the rolling process.
2 ½ c. flour
1 tbsp. baking powder
¼ tsp. salt
8 tbsp. cold butter =6 tablespoons
1/3 c. sugar =5 tablespoons + 1 teaspoons
½ tsp. cinnamon
2/3 c. milk =10 tablespoons + 2 teaspoons
½ tsp. vanilla
2 tsp. honey
Instructions
1. Preheat oven to 425ºF. =gas mark 7
2. Mix flour, baking powder, and salt in a large bowl.
3. Add butter and mix with a fork until fine granules form.
4. Add sugar and cinnamon and mix.
5. Add milk, sugar, and honey and stir with a fork until dough forms.
(More milk or flour may be added if necessary)
6. Knead dough a few times on floured surface, then roll it out into about ½ inch thickness.
7. Use cookie cutters to cut out lembas.
8. Place them on a non-stick cookie sheet so that sides are not touching.
9. Bake in oven for about 10-12 minutes or until they are golden on the outside.

I think I'll be celebrating March 25th with some delicious lembas as well (if it comes out correctly >__>).

I believe that a member posted a Lembas recipe somewhere on the forum a long time ago, which is different from the above one. I've printed it out and also actually tried it once and it was delicious. I just don't know where I left the recipe.

I've tried the recipe Aranel posted, and it is very good (albeit somewhat messy to make). I highly recommend it, but I will warn you: It may take more than one bite, but this stuff is still very filling. I wouldn't plan on eating more than 3 or maybe 4 unless you don't intend to eat for the rest of the day.

that's cool. The lembas recipes I've tried were both very filling as well - which fits to the real lembas  I'm glad the recipe is good, I really should try it as well when I have the time
