Well maybe their father with his foreseeing foresaw something and persuade them stay or something. Maybe they stayed because of Arwen or for reasons of their own. Only what we can say is some maybe's.
The fact is that they helped a lot at the War of the Ring.

Forgive me for sounding stupid but, how so? It's been awhile since I've picked up the books.

Well I am almost sure that in RotK it is written that Elladan and Elrohir along with the rest of the Dunedain helped Aragorn in the War of the Ring and especially at the Battle of the Pelennor Fields. And before this I think at the Council of Elrond, Aragorn says that he traveled a lot with Arwen's brothers.

Elladen and Elrohir were probably born in Middle-earth, and had no idea what Valinor was like. Maybe they grew attached to Middle-earth.

Yes they were born in Middle-earth and have not seen Valinor but remember that all the Elves have something like a goal to sail to the West. So no matter how attached they were with Middle-earth I believe that they wanted to go to Valinor.

All Elves have a longing in them for the Sea, born in Valinor or not. I guess they found something in Middle-earth that meant more to them than Valinor, like Arwen did.

Before I had ever heard of Celebrian I thought that Galadriel had been tortured by Sauron.

We are trying to imagine what happened, we are searching the books again and again (which I think is the most important) and generally have fan at forums like now with Elladan and Elrohir.
True, true. Maybe it is explained somewhere why Elladan and Elrohir stayed in Middle-earth, but no one knows where the answer is.

Well if there is one person that is his son Christopher. But I do not think it is that easy to ask him.
