Do you consider it death for Frodo when he leaves to the 'undying lands'?

yes you are probably right and I think that a happy ending would distort the true spirit of the book. So I am destined to suffer forever seeing that scene

The farewell to Gandalf at the grey havens is moving enough but when Sam, Merry and Pippin realize that they have to say goodbye to Frodo as well it gets really emotional.Though I understand that his life isn´t as before after the terrible things that happened. I also think that ME isn´t the same without the Elves. However a bitter-sweet ending is in any case more realistic than a happy end.

I think Tolkien's idea was that in real life, a lot of times things do work out happily (at least that's what they seemed to say in the RotK special features), although they don't always in the "modern novel". That could be why Tolkien had the other hobbits come back home and live the lives they had wanted to. Still, sometimes there are wounds that can't be healed on this Earth. It's hard sometimes for me thinking about the Grey Havens, because Frodo is the character I love most in any book. I'm glad for such a beautiful ending, with him going to a perfect land (I love unearthliness, which that has plenty of, and my favorite character is going to be healed), but it's also very sad to see him leave Middle-earth forever. A bittersweet ending. But Sam sailed west eventually, and that brings me comfort.
