He seemed more...older, if that makes sense. He had more wisdom in his eyes and knew everything much better than previously. He gain more power and started to look at his life as at somewhat borrowed.
I think he had the same sense of humor but gain something that changed it into joy of being what he was. If it makes sense.

In my opinion Gandalf didn't really change at all, he was just more forthright about himself. In Unfinished Tales, Olorin (Gandalf's name in Valinor) is reluctant to be one of the Istari because he does not deem himself powerful or wise enough to contend with Sauron. When in the form of an old man his powers were deliberately diminished and with the Valar's ban on the Istari used outward displays of power, I think that Gandalf's personality and ability to lead were just veiled, and him coming back as the White Wizard with less restrictions on his power, he was able to cast off the cloak on his personality.

After re-reading the LOTR last summer the thought came to mind that Gandalf, who was first reluctant or even unsure about his true purpose in Middle Earth, might have come to realise what needed to be done when he came back as Gandalf the White. This might also explain the shift in his personality, as has already been pointed out above: both more serious and merrier at the same time. His seriousness could be related to having a clearer view of his own purpose, while his merrier attitude also might have to do with the experience of a certain certainty, instead of the previously experienced doubt.
